What makes this cacao one of the healthiest you can find

A good cacao bean is one of the richest sources of flavanols, a group of polyphenols. This is what ends up in ours, and what does not.

A single yellow Chuncho cacao pod hanging from the branch
  • Native Chuncho variety
  • Short fermentation
  • Minimal heating
  • Never alkalised

High in flavanols

It starts with the variety: we chose Chuncho, a native cacao from Cusco, for its flavanols. Then we make it in a way that keeps them, where most cocoa loses the bulk before it reaches you.

  • No pesticides on the farm
  • Every batch residue tested
  • Independent lab

No pesticides

We work with farms that use no pesticides at all, and an independent lab tests every batch for residues to make sure.

  • Cadmium tested
  • Lead tested
  • Shown against EU limits

Low in heavy metals

Cacao can take up cadmium and lead from the soil. We test every batch for both and publish the figures next to the EU limits.

Rich in minerals

Magnesium and manganese, two minerals cacao is naturally rich in. Both are measured in the lab report.

Fresh cacao beans turned by hand during fermentation
  • Naturally in the bean

High in fibre

Fibre comes with the bean itself. The batch’s nutrition analysis shows how much is in every 100 g.

How this cacao is processed differently from most cacao

Most of a cacao bean’s antioxidants and nutrients are lost on the way to the pouch. Here is how we keep ours.

Grown in Peru, where cacao began

Grown by farmers we know. We work directly with the farmers who grow it, and every pouch traces back to them. Before early access opens, we show you who they are and how they work, on film.

How early access works

“Our goal is to bring you one of the healthiest cacaos you can find. First we tried to understand what makes cacao healthy, and which steps from tree to pouch keep that in or lose it. Then we went looking for the farmers and the processor who would make it that way: a short fermentation, minimal heat, never alkalised. It took four months, and this is the cacao that came out of it. With your help, this is not the end, but the beginning of a wider line of cacao products.”
