Why high-polyphenol olive oil is so rare
An oil can be cold-pressed, extra virgin, and still do almost nothing for your health. What counts is the polyphenol level, and reaching a high one is harder and more expensive. It comes down to three things:
Variety. Some olives are naturally full of polyphenols. The cheap, mild blends most brands use aren't.
Early harvest. Olives picked green give less oil, but far more flavour and polyphenols.
Freshness. Polyphenols fade with time, light and heat, and supermarket oil is often 12 to 18 months old.
